VXR-7000 Community Repeater

Hello,
I'm a bit new to repeaters/Vertex (I usually work on Kenwood portables). I want to add a few extra "sub-channels" to my Vertex VXR-7000 for different groups at my location to talk. I'm not sure if I add a second CHANNEL with the same frequency but different DPL tones, or if I use the Multi-Tone on the same channel and frequency.
It's my understanding that, when I use the Community option, I can have different groups use the repeater and have their own conversations without hearing others? The only thing is that different tones can't transmit simultaneously. Is this all correct?
If I add in a second CHANNEL/Frequency, does the repeater have to be switched to that channel for it to repeat? Or is the channel change option on the front just to be able to listen through the built-in speaker?
